Steamed Asparagus with Lemon Olive Oil

Since we do our best to eat locally and in season, our winter diet consists of mostly root vegetables and winter squash. Come spring, my body fiercely craves the vitality of fresh green vegetables. 

Even though it's not quite at the market yet, I nearly jumped for joy when I saw asparagus on sale at the grocery store. It's one of my favorite veggies, and I love that its sweet, tender flavor requires little else to make a fantastic meal. 

You can cook asparagus a variety of ways, from tossing it on the grill, to oven roasting the spears, or even sauteeing them. But, in general, steaming preserves the most nutrients in our veggies, so that's how I cooked them here. After the spears are fork tender and bright green, I drained them and doused them in our new naturally infused Lemon Olive Oil and a sprinkle of course sea salt.

Ingredients

  • 1 bunch asparagus
  • 1-2 tbsp Lemon Olive Oil
  • course sea salt, to taste

Instructions

  1. Place asparagus in a steamer basket set over boiling water. Steam, covered, until easily pierced with a fork, 2 to 5 minutes depending on thickness.
    2. Toss with Lemon Olive Oil and salt.
