This white balsamic vinegar comes from a single family estate in Modena, Italy — the very town where balsamic vinegar was born. One family grows the grapes, makes the wine, ferments the vinegar, and then ages it for 30 years in oak barrels before we bottle it here in Boulder, Colorado. There is no blending, no shortcuts, and no other source.

Why 30 Years of Aging Matters

Most white balsamic vinegar on the market is aged between 3 and 12 years. At 30 years, the vinegar develops a smooth, velvety mouthfeel and a naturally sweet, bright flavor that younger vinegars simply cannot achieve. The acidity mellows considerably, which means you taste the grape, the oak, and the complexity of three decades of careful aging — not just the sharp bite of vinegar.

Flavor and Uses

Expect a clean, sweet, and slightly fruity profile with a silky texture that coats beautifully without being heavy. This white balsamic is outstanding drizzled over fresh fruit, stone fruit, and berries, over goat cheese or brie, over white fish and salmon fillets, in slaws and stir-fries, and as a base for a quick white balsamic vinaigrette. Because the color is pale gold rather than dark brown, it won't discolor light-colored dishes — making it ideal anywhere a classic balsamic would look out of place.
