Garlic Roasted Brussel Sprouts

You might not believe something so *basic* would create such an eye-catching, mouth watering dish, but our whole mission at Healthy Harvest is to inspire people to reconnect with the simple joys of cooking. If you use the best ingredients you can find, you don't need a lot of them. 

This plate is good food and good for you. Brussel sprouts are high in Vitamin K (strong bones) and Vitamin C (immune boost), and you've heard us tout EVOO's many benefits.

Our small batch naturally infused garlic oil is made with locally grown garlic from Monroe Organic Farms in Greeley, Colorado. We roast the garlic and slowly infuse it with our Healthy Harvest Greek Oil, a cold pressed extra virgin olive oil that has been lab tested for purity and quality. With rampant fraud in the olive oil industry, "flavored" oils in stores often disguise cheap oils that have been adulterated. By contrast, we have known the producers of our Healthy Harvest Greek oil for many years, we visit the farms ourselves, and we have the oil tested by an independent lab. The difference in taste is astounding.

I have been using Roasted Garlic Olive Oil on EVERYTHING, but these Brussel Sprouts are out of this world. First, wash the sprouts. Then trim away the stem and any brown leaves. If the heads are large, cut them in half or even quarters. Drizzle with the Garlic Infused Oil and roast at 375 degrees for about 20 minutes or until nicely browned. 

Lightly drizzle with a touch more Garlic Oil before serving.

Preheat oven to 375. Wash and trim brussel sprouts. Arrange in single layer on a sheet pan. Drizzle with Garlic EVOO, salt to taste. Roast for 20-25 minutes until outer leaves are golden brown. 

 Notes: Our brand new naturally infused LEMON extra virgin olive oil would also be killer on these!
