All month long, we have been keeping it simple with five ingredients or less. Our new, naturally infused Lemon and Garlic Oils add so much flavor, you can add them to practically any produce and have a meal or side dish in under 10 minutes.
So far, we've made Lemony Steamed Asparagus, a traditional Greek Tomato Salad, and Greek Lemon Herb Roasted Potatoes. Today, we're sharing this easy Arugula Salad with Lemon Dressing.
Want to dress it up? Go for it! Need to use up veggies in your garden? We're not going to stop you. We just want to assure you that creating a fantastic meal does not have to be complex.
Fill a bowl with spicy arugula, crumble over some feta (or parmesan!), and drizzle generously with Lemon Olive Oil. Seriously. That's it. The arugula is tender and peppery, the cheese is creamy and tangy, and the Lemon Oil adds a brightness that makes you want to eat a whole bowl of greens in the summertime!
Olives would make a great addition if you have some. If you're making a bowl for yourself, why even bother with pitting the olives? If you're serving others, you can pit a large amount of olives at once by placing them on a baking sheet or cutting board and lightly pressing with a rolling pin.

Arugula Salad with Lemon Dressing
- arugula, washed
- Lemon Olive OIl
- salt and pepper, to taste
Combine ingredients in a bowl. Toss well.
