Olive Oil Apple Cake

It is seasonal, craveable and SO easy.

First, you start off by peeling, coring, and thinly slicing 4 red apples. Then, arrange them in a lightly greased or parchment-lined 9-inch baking pan. It's worth taking the few extra minutes to carefully create an eye-pleasing apple mandala. It's a little like an adult coloring book but in the kitchen! :)

Next, add the cake mixture and bake for 20 minutes at 350 degrees. The secret to an ultra light, fluffy cake? Olive oil! Our Healthy Harvest Greek extra virgin olive oil will make your dessert spongier, healthier, and last longer. Plus, it adds a depth of flavor without being overpowering.

While the cake is baking, mix together the honey glaze. After the timer goes off, pour the honey mixture evenly over the cake and bake another 15-20 minutes at 400 degrees. When done, the top will be golden brown and a toothpick will come out clean when inserted in the center.

Olive Oil Apple Cake

Prep Time: 10 minutes 

Bake Time: 40 minutes

Ingredients

  • 4 red apples peeled, cored and thinly sliced
  • 5 tablespoons all-purpose flour sifted
  • 5 tablespoons granulated sugar
  • 5 tablespoons extra virgin olive oil
  • 1 teaspoon baking powder
  • 4 large eggs
  • 2/3 cup raw, unfilitered honey

Instructions

  1. Preheat oven to 350ºF.
  2. Grease and/or line an 8 inch cake pan with nonstick parchment paper, then place the apple slices in concentric circles around the pan.
  3. Put flour, sugar, baking powder, olive oil and 2 eggs in a bowl and whisk until smooth.
  4. Pour batter over the apples and bake for 20 minutes. Take the pan out of the oven and increase heat to 400ºF.
  5. In a bowl, whisk 2 eggs and honey. Pour mixture over the cake and bake in the oven for another 15-20 minutes until golden brown and fork comes out clean when poked in the center.
  6. Serve warm or cold.
