These Grade A jumbo olives are hand-picked when perfectly ripe on a fourth-generation single estate in Sparta, Greece. Healthy Harvest has had a direct relationship with this family for 15 years.
The olives are slow-cured using traditional methods of lacto-fermentation in a sea salt brine. They are raw, unpasteurized, and do not contain lye.
