Unlike industrial farming where olives are shaken from trees (often bruising the fruit), our kalamata olives are painstakingly picked by hand at the moment of perfect ripeness. Check the label on most supermarket olives and you'll find lye, color stabilizers, and preservatives. Not here. We believe in the old ways. Our kalamata olives are preserved using traditional fermentation in a sea salt brine. This slow process naturally cures the fruit without synthetic colors or additives. The Farm

These Grade A jumbo olives are hand-picked when perfectly ripe on a fourth-generation single estate in Sparta, Greece. Healthy Harvest has had a direct relationship with this family for 15 years. 

The Olives

 The olives are slow-cured using traditional methods of lacto-fermentation in a sea salt brine. They are raw, unpasteurized, and do not contain lye.
