Unlike industrial farming where olives are shaken from trees (often bruising the fruit), our Kalamon olives are painstakingly picked by hand at the moment of perfect ripeness. Naturally Cured, No Preservatives

Check the label on most supermarket olives and you’ll find lye, color stabilizers, and preservatives. Not here. We believe in the old ways. Our olives are preserved using traditional fermentation in a sea salt brine. This slow process naturally cures the fruit without synthetic colors or additives. It is just the olive, the water, and the patience of time.

Meaty Texture & Lower Sodium

Because we don't rush the curing process, we don't need to blast the olives with excessive salt. The result is a Greek black olive that is rich and meaty—never mushy—with a sodium content lower than most commercial brands. You can actually taste the fruit, not just the brine.

    These Grade A jumbo olives are hand-picked when perfectly ripe on a fourth-generation single estate in Sparta, Greece. Healthy Harvest has had a direct relationship with this family for 15 years.

     The olives are slow-cured using traditional methods of lacto-fermentation in a sea salt brine. They are raw, unpasteurized, and do not contain lye.
