Two Products in One

This works equally well as a salad dressing and as a marinade. As a dressing, it coats greens lightly and lets the quality of the olive oil speak for itself. As a marinade, the acidity of the vinegar tenderizes meat while the EVOO carries flavor deep into the protein. Use it on chicken, lamb, fish, or vegetables before grilling or roasting. It's also excellent stirred into pasta salads, drizzled over roasted peppers, or used as a dipping sauce for good bread.

Most commercial vinaigrettes use lower-grade refined oils.
